Vegetable Poha With South Indian Tadka

Serving -2 
Ingredients:
Poha , soaked – 1 Cup
Oil – 3 Tablespoons
Mustard Seeds – 1 /2 Teaspoon
White Urad dal – 1 Teaspoon
Chana dal – 1 Teaspoon
Curry Leaves – 4 to 5
Asafoetida – 1 / 4 Teaspoon
Potatoes, chopped – 1 small
Onion, chopped – 1 Medium
Peas, – ¼ cup
Carrot, chopped – ¼ cup
Green chilli, chopped – 2
Turmeric Powder – 1/2 Teaspoon
Red chilli powder – ½ Teaspoon
Coriander powder – ½ Teaspoon
Salt to taste
Lemon Juice – 2 Tablespoon
Fresh coriander Leaves – 2 Tablespoons
Method :
Heat oil in kadai, add muster seeds, let them splutter. Add chana dal, urad dal, curry leaves, green chilli, and asafoetida, mix well.
Add chopped potatoes, carrot, peas and cook for 2 to 3 minute. Add onion, mix well cook for 1 to 2 minutes.
Add turmeric powder, salt, red chilli powder, coriander powder and mix well.

Add soaked poha, lemon juice and mix well. Cook for 2 to 3 minutes. Add fresh coriander leaves and mix well. 
Serve hot.
