Oats Poha

Serving – 2
Ingredients:
Poha , soaked – 1 /2 cup
Oats , Roasted – 1 / 2 cup
Oil – 3 Tablespoons
Mustard Seeds – 1 /2 Teaspoon
Cumin seeds – 1 / 2 Teaspoon
Curry Leaves – 4 to 5
Green chilli , chopped – 2
Garlic ,chopped – 1 Tablespoon
Potatoes ,chopped – 1 Medium
Onion , chopped – 1 Medium
Peanut – 2 Tablespoons
Turmeric Powder – 1 /2 teaspoon
Red chilli powder – 1 / 2 Teaspoon
Salt to taste
Lemon Juice – 2 Tablespoon
Sugar – 1 Tablespoon
Fresh Pomegranate  Seeds – 1 Tablespoon
Tomato Slices , for garnishing – 3 to 4
Method :
Heats one pan , add oats and roast them for 3 to 4 minutes . stir continuously . keep aside let it cool down.
Heat oil in kadai  , add mustard seeds ,cumin seeds   and let them splutter. add curry leaves , peanut  , chopped garlic , green chilli  and  mix well . add   chopped potatoes and saute for 2 to 3 minute. add onion and cook for 1 minute.
Add  salt , turmeric powder , red chilli powder ,   mix well .
Add soaked poha ,  roasted oats  , sugar , and mix well . cook for 1 to 2 minutes.
Add lemon juice ,  and mix well . garnish with tomato slices  , pomegranate and serve hot .
