Cucumber And Spinach (palak) Pancakes

Serving – 2

Ingredients:
Rice flour – 1 cup
Cucumber, grated – 1 medium
Spinach (palak), shredded – 15 to 20 leaves
Curd – 5 Tablespoons
Salt to taste
Pepper powder – 1 / 2 Teaspoon
Red chilli powder – 1 Teaspoon
Turmeric powder – 1 / 4 Teaspoon
Water – as required
Oil – 3 to 4 Tablespoons

Ingredients for deep:
Mint leaves – 20
Cumin seeds – 1 / 4 Teaspoon
Curd – 1 / 2 cup
Salt to taste
Green chilli  – 2

Method for deep :
Blend well all the ingredients, make smooth deep.

Method:
Take one bowl, add grated cucumber, chopped palak (spinach), salt, pepper powder, red chilli powder, curd, rice flour, turmeric powder, water, mix well and make pouring consistency batter. keep aside for 15 minutes.

Heat pan, pour ladleful batter, spread it well, apply some oil, let it cook for 2 to 3 minutes or till underside lightly brown, turn it, apply some oil and cook for another 2 to 3 minutes.

Serve hot with minty deep.
