Turai (Ridge Gourd) And Moong Dal ki Sabji

Preparation Time – 10 to 12 minutes

Cooking Time – 8 to 10 minutes

Turai (ridge gourd), peeled, cut into roundel – 200 gm
Moong dal (skinless), soaked – 4 Tablespoons
Oil – 2 Tablespoons
Cumin seeds – ½ Teaspoon
Hing (asafoetida) – ¼ Teaspoon
Onion, chopped – 1 medium
Tomato, chopped – 1 medium
Ginger- garlic paste-2 Teaspoon
Turmeric powder – ¼ Teaspoon
Red chilly powder – ½ Teaspoon
Coriander powder – ½ Teaspoon
Garam masala – ¼ Teaspoon
Salt to taste
Amchur powder – ¼ Teaspoon
Water – as required

Soak moong dal for 1 hour.

Heat oil in kadai, add cumin seeds, hing, onion, ginger garlic paste and mix well. cook for 1 minutes.

Add tomatoes, salt and mix well. Cook till tomatoes soft.

Add turmeric powder, red chilly powder, coriander powder, garam masala, amcur powder and mix well.

Add soaked moong dal and turai and mix well. Add ½ cup water, cover pan with lid and cook for 10 to 12 minutes or till done. Stir occasionally.

Serve hot with roti.
