Sooji (Rawa / Semolina) Handvo

Prepare this awesome mouth watering Gujarati Handvo made with sooji (rawa / semolia). This is a perfect treat for evening snacks or even for dinner.

Preparation Time : 10 minutes

Cooking Time : 30 minutes

Ingredients :

Sooji/ Semolina – 1 Cup

Gram Flour/ Besan – 1 Tbsp

Buttermilk – 1 1/2 Cup

Grated ginger as per taste

Garlic and chilly paste as per taste

salt to taste

Turmeric powder – 1 Tsp


1 Take a sooji in bowl.

2 Add besan ,salt , turmeric powder, grated ginger, garlic and chilly paste and mix well.

3 Add buttermilk , mix well. Keep mixing to ensure no lumps appears in the batter.

4 Give batter a rest for the 30 minutes.

5 After 30 minutes add kasuri methi and fresh chopped coriander leaves and mix well.

6 Heat 3 to 4 tbsp oil in pan .we need a oil in bit of quantity to avoid handvo sticking in pan and becoming dry in the process.

7 Add mustard seeds,let them splutter.

8 Add cumin seeds,let them splutter.

9 meanwhile take batter which is prepared, add 1/4 tsp baking soda + 1/4 tsp citric acid ( substitute of 1/2 tsp Eno) and pour 1 tsp buttermilk again to activate soda and citric acid, mix well.

10 now put the tadka pan back on flame. add curry leaves, sesame seeds.

11 Now pour prepared batter , sprinkle some more sesame seeds . Cover with lid and cook for 10 – 15 minutes.

12 Now flip it up side down and do not cover lid .keep it open else upper layer will become soggy.

13 cook for another 10 -12 minutes.

14 Serve hot with green chutney or catchup.


Add black sesame seeds also when you add white ones
